What I Nom Today ~ OMG...I'm so behind on food blogging & I do have tons to write about :) Ah well, for today, you get my quickie dinner. What do you do when you have leftover bulgogi? Well, fry it up, pour a scrambled egg over it, put the whole omelet over fried rice, sprinkle some furikake and voila...Korean style Japanese gyudon :)

What I Nom Today ~ What would you do if you only had 2 Korean short ribs left over (not enough for dinner for 1, never mind for 2)?  Well, if you were me and likewise obsessed with the Los Angeles-baed Kogi Korean taco truck, you would dice up the remaining meat from the short ribs, whip up a quick homemade pico de gallo, saturate some minced lettuce with an Asian viniagrette, throw the whole mess into some flour tortillas and VOILA...my own DIY version of Kogi's famous signature Korean short rib taco! Oh nom, nom, nom, nom...NOM!!!

What I Nom Today ~ My obsession is NO LONGER!  I'm such a big DIY girl with clothing, so I thought to myself, why not do the same with food???  Duh!  So, taking the description of their Spam Kimchi slider off of Kogi's website, I have masterfully recreated it!  So easy!  Fried Spam, kimchi & spicy mayo on toasted hamburger buns...voila!  Om nom nom nom nom nom!!!

What I Wish I Nom Today ~ So...I have been obsessed with the Los Angeles-based Kogi Korean BBQ taco truck for *some* time now.  I had read that they drive around LA and Twitter where their location is going to be.  When I also read that they can have over a hundred people in line wait 3 hours for them *and* they sold out of 450 lbs of beef on one stop, I've never wanted to be in another city so badly in my life!

Finally, when I read that one of their new specials is a Spam kimchi slider (and you all know how much I loves me my Spam), my head just about exploded!  I'm going to go to bed now and cry myself to sleep *sniff*sniff* :(
